Easy Apple Cheesecake Bars Recipe

   Fall season is here and I’m sharing one of my favorite fall desserts to make.  Fun fact: my Mom used to have a bakery business and I would help her bake cakes and pastries and it was one of my fondest memories with her growing up and also the main reason why I love to bake. The recipe I’m sharing today is called Easy Apple Cheesecake Bars and my family loves it and it’s always a hit during get-togethers.  I shopped all the ingredients from Walmart and I’m so glad that they have private brands to keep my grocery bill  within  budget without sacrificing quality.  I am able to stretch our dollar further and get everything I need for our favorite recipes.  My family can always find what we need on a budget at Walmart.

Ingredients:

1 box Yellow Cake Mix

1/2 cup cold butter

2 packages (8oz each) cream cheese, softened

1/2 cup sugar

1 tsp vanilla

1 egg

1 can (21 oz) apple pie filling

1/2 tsp ground cinnamon

1/3 cup chopped walnuts(optional)

Directions:

  1. Heat oven to 350degreeF. Spray bottom and sides of 13×9-inch pan with cooking spray.
  2. Place cake mix in a large bowl. Cut in butter with a fork until mixture is crumbly and coarse. Reserve 1 1/2 cups crumb mixture; press remaining crumbs in bottom of pan. Bake 10 minutes.
  3. Meanwhile, in a large bowl, beat cream cheese, sugar, vanilla, and egg with electric mixer on medium speed until smooth.
  4. Spread cream cheese mixture evenly over partially baked crust. In medium bowl, mix pie filling and cinnamon. Spoon evenly over cream cheese mixture. Sprinkle reserved crumbs over top. Sprinkle with walnuts(optional).
  5. Bake 35 to 40 mins longer or until golden brown. Cool about 30 mins. Refrigerate to chill, about 2 hours.  Cut into bars. Store covered in refrigerator.

My kids also like to eat it warm and served with a scoop of vanilla ice cream. Enjoy.
